Rêveries bâloises
Désignée ville suisse du goût cette année, Bâle, capitale culturelle et région traditionnelle à deux pas de la France et de l’Allemagne, fait un tabac. Chaque année, près d’un million de visiteurs sont attirés par son art de vivre unique et absolument irrésistible. Stimulations sensorielles délicieuses dans un patchwork citadin contrasté.
Les ponts dessinent leur silhouette à contre-jour tandis que le soleil perce subtilement le plafond nuageux au-dessus du Rhin. Ce dernier traverse et découpe la ville en son milieu. Sur la rive droite, les quartiers branchés, métissés et au charme suranné. Sur celle de gauche, la cité historique, les vieilles pierres, les artères commerçantes et les monuments au goût d’éternité. Où que l’on soit à Bâle, parmi ses ruelles pavées, face à ses grands musées ou au cœur de sa scène gastronomique dynamique, des vibrations inspirantes à la fréquence résolument humaine et nostalgique se font ressentir. Il y a aussi cet air bucolique qui ajoute une quiétude ravissante à chaque coin de rue; dans le doux glissement des canards sur l’eau, dans le bruissement des fontaines surmontées de statues, dans la rumeur délicate de la ville. Ce qui frappe le plus ici, ce sont peut-être ces sonorités feutrées. Non pas que la ville se soit engourdie mais les voitures étant tenues à distance, on s’y déplace plus volontiers à vélo, en tram ou à pied. Autour de soi, un urbanisme composé de petites maisons à colombages ou aux façades mangées par les feuillages, les pétales de roses et les géraniums tandis que les allées, bordées de bouquinistes et de boutiques cossues, invitent à la flânerie et à la détente. Avancer dans ce dégradé de couleurs donne l’impression de plonger dans un livre d’images. On s’attendrait presque à voir un lapin-boulanger ou un écureuil-postier emprunter le passage pour piétons.

Bruissement des fontaines
L’ART À PORTÉE DE MAIN
Dans la plus ancienne ville universitaire de Suisse, enrichie par l’industrie pharmaceutique, la beauté est partout : de sa grande Place du Marché avec son magnifique Hôtel de ville du XVIe siècle, en grès rose foncé décoré de fresques, à la cathédrale du XIIe siècle de style roman tardif et gothique, en passant par les édifices conçus par les architectes Mario Botta, Richard Meyer ou Herzog & de Meuron.
Sa proximité avec la France et l’Allemagne favorise les synergies (deux tramways vous font passer la frontière en deux temps trois mouvements) et Bâle regorge de musées d’importance grâce à sa tradition de mécénat vieille de plusieurs siècles. On compte une quarantaine de musées, qui offre la plus haute densité en musées du pays, dont trois institutions de renom : La fondation Beyeler, avec sa collection d’art moderne exceptionnelle (Monet, Matisse, Giacometti, Andy Warhol, …) sans compter le bâtiment en lui-même, œuvre de Renzo Piano. Le Musée Tinguely, conçu par l’architecte tessinois Mario Botta, consacré à l’artiste plasticien a été inauguré en 1996. Il est protégé au titre des biens culturels suisses. Et enfin le Kunstmuseum qui se concentre sur la peinture des XVe et XVIe siècles ainsi que l’art européen de 1850 à 1950.
Invitation à la flânerie
UNE GASTRONOMIE VIGOUREUSE ET UNE SCÈNE HÔTELIÈRE INSPIRANTE
Bâle abrite certains des plus vieux restaurants du pays comme l’institution du Gasthof zum Goldenen Sternen qui existe depuis 1412. Particulièrement prisées lors du Carnaval, de la Foire d’automne et de son marché de Noël, les friandises telles que les Läckerlis, Mässmogge (bonbons au sucre en forme de petits bâtons), Rosekiechli (beignets de rose) traditionnels, Basler Rahmtäfeli (caramels mous) ou encore Brunsli (biscuits au chocolat et aux noisettes hachées) feront la joie des becs sucrés. Côté salé, vous trouverez le Fastenwähe, une sorte de bretzel saupoudré de cumin que l’on retrouve dans les boulangeries de la mi-janvier à Pâques, le Suuri Läberli (foie-de-bœuf au vinaigre) ou le saumon bâlois. Autrefois, on pêchait ce dernier dans le Rhin et il était notamment servi au XVIe siècle dans les corporations en tant que plat de poisson luxueux et très apprécié.
La quiétude
Des trésors à dénicher
Le Volkshaus, boutique-hôtel à deux pas des rives du Rhin, est une adresse merveilleuse pour tout ceux en quête d’une halte hors du temps. Il y a d’abord la façade majestueuse qui rappelle indirectement le Bauhaus dans sa simplicité élégante avec ses grandes façades et ses hauts plafonds. Puis, on découvre le jardin intérieur, le bruit du gravier lorsqu’on le traverse, celui du frottement des feuilles de platane. Il y a aussi sa magnifique brasserie imaginée par Herzog & de Meuron en 2012 dans laquelle les vitraux créés par l’artiste allemand Imi Knoebel, connu pour son approche théorique de la couleur et de la forme, apportent au lieu de la beauté. Enfin, l’hôtel dans son ensemble dédié à l’art contemporain grâce à sa collaboration avec la Galerie von Bartha relève l’exploit d’introduire l’art contemporain dans la vie quotidienne.
Le Volkshaus est un lieu de rencontre parfaite pour célébrer l’architecture, l’art et la culture. Le Chef Benjamin Mohr originaire d’Hambourg et sa brigade nous font découvrir sa passion pour la cuisine moderne où il accorde une grande importance au produit et développe sa propre signature. « Que ce soit le rôti de viande ou une variante végétarienne, le bon goût ne se démode jamais », explique le chef qui offre une belle architecture à son répertoire tout en célébrant des classiques de la cuisine alpine : saucisse de veau, salade froide aux pommes de terre, ratatouille généreuse, escalope viennoise ou paillarde de veau.

Lorsque le voyage prendra fin, les déambulations des souvenirs resteront sans doute profondément ancrées. Quoi qu’il se passe dans le monde, ce qui est certain, c’est que Bâle reste Bâle avec son enthousiasme élégant et discret, celle qui rappelle l’indispensable et fait cogner la joie.
